Gutturnio DOC Superiore Colombaia

This is somewhere between the other two Gutturnio DOC wines we produce. It is a still wine that can be drunk a year after the harvest but it can also be aged for some years. It gets its name from the oldest family vineyards near the village of Folignano.

Colombaia is macerated on the skins for about ten days with frequent punching down and pumping over. After alcoholic fermentation, malolactic fermentation starts and this helps to smooth out a certain sharpness typical of Barbera. Then it briefly rests in second-year barriques. It matures in the bottle for at least eight months to prepare it for release in autumn. It goes well with meat dishes and mature cheeses.

Annual production is around 15000 bottles.
